Stuffed French Toast with Driftless Filling

Ingredients

For the filling:

  • 1 container Driftless Cheese (Lavender & Honey, Maple, or Cranberries & Cinnamon)
  • 1–2 tbsp honey or maple syrup (optional, depending on sweetness level)
  • Optional: fresh berries or thinly sliced fruit

For the French toast:

  • 8 slices thick-cut brioche or challah
  • 4 eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Pinch of salt
  • Butter for cooking

For serving:

  • Powdered sugar
  • Extra honey or maple syrup
  • Fresh fruit

Instructions

1. Prepare the Driftless filling

  • Scoop the Driftless into a bowl
  • Lightly stir just to loosen the texture
  • Add a touch of honey or maple if you want it sweeter, but keep it minimal

The goal: keep the flavor true to the cheese, creamy, slightly tangy, and naturally sweet.


2. Build the sandwiches

  • Lay out 4 slices of bread
  • Spread a thick, even layer of Driftless (don’t be shy, this is the star)
  • Add fruit if using
  • Top with remaining slices and gently press

3. Make the custard

Whisk together:

  • Eggs
  • Milk
  • Vanilla
  • Cinnamon
  • Salt

4. Dip and cook

  • Heat butter in a skillet over medium heat
  • Dip each sandwich quickly into the custard (avoid over-soaking)
  • Cook 3–4 minutes per side until golden brown and crisp

5. Finish and serve

  • Slice in half so the creamy Driftless center shows
  • Dust with powdered sugar
  • Drizzle lightly with honey or maple syrup
  • Add fresh fruit on top or on the side
