Stuffed French Toast with Driftless Filling

Ingredients
For the filling:
- 1 container Driftless Cheese (Lavender & Honey, Maple, or Cranberries & Cinnamon)
- 1–2 tbsp honey or maple syrup (optional, depending on sweetness level)
- Optional: fresh berries or thinly sliced fruit
For the French toast:
- 8 slices thick-cut brioche or challah
- 4 eggs
- 1 cup milk
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- Pinch of salt
- Butter for cooking
For serving:
- Powdered sugar
- Extra honey or maple syrup
- Fresh fruit
Instructions
1. Prepare the Driftless filling
- Scoop the Driftless into a bowl
- Lightly stir just to loosen the texture
- Add a touch of honey or maple if you want it sweeter, but keep it minimal
The goal: keep the flavor true to the cheese, creamy, slightly tangy, and naturally sweet.
2. Build the sandwiches
- Lay out 4 slices of bread
- Spread a thick, even layer of Driftless (don’t be shy, this is the star)
- Add fruit if using
- Top with remaining slices and gently press
3. Make the custard
Whisk together:
- Eggs
- Milk
- Vanilla
- Cinnamon
- Salt
4. Dip and cook
- Heat butter in a skillet over medium heat
- Dip each sandwich quickly into the custard (avoid over-soaking)
- Cook 3–4 minutes per side until golden brown and crisp
5. Finish and serve
- Slice in half so the creamy Driftless center shows
- Dust with powdered sugar
- Drizzle lightly with honey or maple syrup
- Add fresh fruit on top or on the side
