Maple Apple & Wischego Stuffed Chicken

Fall flavors meet one of our favorite cheeses in this cozy dinner recipe. Hidden Springs Wischego is tucked inside tender chicken breasts with crisp apples and fresh thyme, then everything is finished with a sweet and tangy maple-Dijon glaze.
It feels special enough for a weekend dinner but uses simple ingredients that make it completely doable on a weeknight.
Ingredients
For the chicken
- 4 boneless, skinless chicken breasts
- 1½ cups shredded Hidden Springs Wischego
- 1 medium crisp apple, such as Honeycrisp or Granny Smith, thinly sliced
- 1 teaspoon fresh thyme leaves, plus more for serving
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
For the Maple-Dijon Glaze
- 2 tablespoons pure maple syrup
- 1½ tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon olive oil
Instructions
- Preheat the oven. Heat the oven to 375°F.
- Prepare the chicken. Carefully cut a pocket into the side of each chicken breast, being careful not to slice all the way through. Season the outside with garlic powder, salt, and pepper.
- Stuff with fall flavors. Fill each chicken breast with shredded Wischego, a few thin apple slices, and a sprinkle of fresh thyme. Secure with toothpicks if needed.
- Sear the chicken. Heat 1 tablespoon olive oil in an oven-safe skillet over medium-high heat. Add the chicken and sear for about 2–3 minutes per side, until golden.
- Make the glaze. Whisk together maple syrup, Dijon mustard, apple cider vinegar, and olive oil.
- Glaze and bake. Brush the chicken generously with the maple-Dijon mixture. Transfer the skillet to the oven and bake for approximately 15–20 minutes, or until the thickest part of the chicken reaches 165°F.
- Rest and serve. Let the chicken rest for about 5 minutes before serving. Spoon any juices from the skillet over the top and finish with a little fresh thyme.
Serving Ideas
Make this a full fall dinner with roasted Brussels sprouts, butternut squash, sweet potatoes, or crispy roasted potatoes. A simple apple and greens salad would also be a great lighter pairing.

Keep those apple slices thin! They'll soften inside the chicken as it cooks while still adding a little texture. The combination of tart apple, savory Wischego, and maple-Dijon gives you that sweet-and-savory balance without making the dish overly sweet.

Save a little shredded Wischego when you're stuffing the chicken. During the last few minutes of baking, sprinkle it over the top and return the chicken to the oven until the cheese is melted and lightly golden.
