Creamy Garlic & Herb Driftless Stuffed Pork Chops

Creamy Garlic & Herb Driftless Stuffed Pork Chops

A crisp, golden pork chop with a creamy surprise inside. These stuffed pork chops feature Hidden Springs Garlic & Herb Driftless, spinach, and a touch of garlic for an easy fall dinner that feels special without requiring a long list of ingredients.

Ingredients

  • 4 thick-cut boneless pork chops
  • 1 cup Hidden Springs Garlic & Herb Driftless
  • 1 cup fresh baby spinach, roughly chopped
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon butter
  • Fresh thyme or parsley for serving

Instructions

  1. Preheat the oven. Heat the oven to 375°F.

  2. Make the filling. Combine the Garlic & Herb Driftless, chopped spinach, and minced garlic in a small bowl.

  3. Prepare the pork chops. Carefully cut a pocket into the side of each pork chop without cutting all the way through.

  4. Stuff the chops. Divide the Driftless mixture between the pork chops, gently pressing it into each pocket. Secure with toothpicks if needed.

  5. Season. Rub the outside of the pork chops with olive oil and season with smoked paprika, thyme, salt, and black pepper.

  6. Sear. Melt the butter in an oven-safe skillet over medium-high heat. Sear the pork chops for about 2–3 minutes on each side until golden brown.

  7. Finish in the oven. Transfer the skillet to the oven and bake for approximately 10–15 minutes, depending on thickness, until the pork reaches an internal temperature of 145°F.

  8. Rest. Allow the pork chops to rest for about 5 minutes before serving.

What to Serve With It

This one is made for fall sides. Try it with roasted baby potatoes, Brussels sprouts, green beans, mashed potatoes, or roasted apples.

Farm Kitchen Tip

Don't overfill the pork chops. Leaving a little room around the edges helps keep that creamy Garlic & Herb Driftless tucked inside as the pork cooks.

An Easy Variation

For an even more autumn-inspired version, add a few tablespoons of finely diced apple to the Driftless filling. The apple adds just enough sweetness and crunch to balance the savory garlic, herbs, and pork.

This one would also photograph beautifully cut open so you can see the creamy Driftless filling inside, which would make it a strong recipe for the blog, Pinterest, and social content.
