Al's Homemade Cheese-Stuffed Bread

There is something especially good about a loaf of homemade bread fresh from the oven—but tuck cubes of your favorite cheese throughout the dough, and it gets even better. This simple bread recipe creates a golden loaf with pockets of melted cheese hidden inside.

Use your favorite Hidden Springs cheese to make it your own. A firmer cheese that can be diced into small cubes works especially well.

Ingredients

  • 470 grams all-purpose flour, weighed for best results
  • 1 tablespoon SAF instant yeast
  • 1 tablespoon salt
  • 1–2 tablespoons sugar
  • 1½ cups very warm water
  • ⅓ pound Hidden Springs cheese, cut into ¼-inch cubes
  • Nonstick cooking spray or oil for greasing the pan

Optional Seasoning:

  • 1 tablespoon garlic powder, Mrs. Dash, taco seasoning, or another favorite dry seasoning blend

Instructions

  1. Prepare a warm place for the dough. Set your oven to its bread-proofing setting, around 95°F. If your oven does not have a proofing setting, preheat it for 3–5 minutes, turn it off, and leave the oven light on to create a warm environment.
  2. Combine the dry ingredients. In a large bowl, mix the flour, instant yeast, salt, and sugar. If you'd like a seasoned loaf, add 1 tablespoon of your chosen dry seasoning at this point.
  3. Add the water. Pour in 1½ cups of very warm water and mix until no dry flour remains in the bowl.
  4. Knead the dough. Knead for approximately 3 minutes.
  5. Add the cheese. Lightly flour a work surface and flatten the dough into approximately a 12 x 18-inch rectangle. Lightly mist the surface of the dough with water, then scatter the ¼-inch cheese cubes evenly across it.
  6. Roll the loaf. Starting at one end, roll the dough into a log. Because the underside of the dough will be floured, lightly spritz the dough with water as you roll to help the layers stick together. Pinch the seam and ends closed.
  7. Transfer to the pan. Place the dough seam-side down in a well-greased loaf pan. This recipe will make:
    • One loaf in a 9 x 5-inch pan
    • Two loaves in 7 x 4-inch pans
    • Three small loaves in 5 x 3-inch pans
  8. Let it rise. Place the pan in the warm oven and allow the dough to rise for about 20 minutes.
  9. Preheat the oven. Remove the risen dough and preheat the oven to 400°F.
  10. Bake. Bake for approximately 25 minutes.
  11. Check for doneness. Check the center of the loaf with an instant-read thermometer. The bread should reach approximately 200°F. If it hasn't reached temperature, continue baking for up to another 10 minutes.
  12. Cool and enjoy. Remove the bread from the pan and transfer it to a cooling rack. Allow it to cool slightly before slicing—and enjoy those pockets of melted cheese inside.

Try this bread with Wischego for a rich, savory loaf or Bad Axe Jalapeño when you want a little extra kick. You could also match your dry seasoning to the cheese—garlic and herbs for a classic loaf or a Southwestern seasoning with Bad Axe Jalapeño.

Farm Kitchen Tip

Cutting the cheese into small ¼-inch cubes rather than shredding it creates little pockets of cheese throughout the finished loaf. When rolling the dough, make sure the ends and seam are well sealed to help keep all that cheesy goodness inside while it bakes.
