From Pasture to Cheese Board

1. Healthy Pastures and Happy Sheep

Great cheese starts with great milk. Dairy sheep thrive on open pasture where they can graze on grasses, clover, and seasonal plants. The variety in their diet contributes to the flavor and richness of the milk.

Sheep naturally produce milk that is higher in butterfat and protein than cow’s milk, which gives sheep milk cheese its signature creaminess and depth of flavor.

2. Fresh Milk Collection

After milking, the fresh sheep milk is carefully handled to maintain its quality. Clean equipment, proper temperature control, and careful storage ensure that the milk arrives at the creamery in excellent condition.

3. The Cheesemaking Process

4. Aging and Care

Many cheeses spend weeks or months aging in controlled environments. During this time, flavors continue to develop and textures change. Cheesemakers carefully monitor temperature, humidity, and airflow to help the cheese mature properly.

This aging process is where many cheeses gain their unique character.

5. Ready for the Cheese Board

Once the cheese reaches its ideal stage, it is cut, packaged, and shared with customers, markets, and restaurants. From there it eventually finds its way onto cheese boards, recipes, and family tables.

What started as milk from grazing sheep becomes something meant to be shared and enjoyed.
