Eau Claire Farmers Market Mushroom Pasta with/without Trout Fillet

This recipe was directly hatched from our experiences at the Eau Claire Farmers Market in Eau Clarie Wisconsin. There is nothing more fun than working with fellow vendors to create something special. Our friends at both Jill and Lilly’s and the Fun Guy Mushroom Farm started throwing around ideas and voila! Of course, you may not be in Eau Claire for the market which by the way is every Saturday starting in May from 7:30 am - 1 pm, but we encourage you to consider using these fresh ingredients whenever possible. The real theme here is to get to know your local vendors and experiment. This is one of Travis’ favorite recipes, and he loves to run to the banks of the Kickapoo River to grab that brook trout to add to this recipe. Be inspired and try your own combinations 😊

 

Ingredients

  • Jill and Lilly’s Homemade Pasta: approximately 250g (1/2 pound) or your favorite pasta

  • Fun Guy Farm Fresh Mushrooms: approximately ½ pound raw mushroom of choice

  • Hidden Springs Driftless Basil and Olive Oil cheese: 5 ounce tub

  • 6 oz Fresh trout fillets from the banks of your favorite stream: or any white fish you have handy

  • 1 tsp of Extra virgin Olive Oil OR 1 tsp of butter

  • 3 sprigs Fresh lemon Tyme

Directions

  1. In a large frying pan, saute mushrooms with Salt, Pepper, olive oil, and Fresh Lemon Tyme

  2. Season Trout with favorite seasonings, and bake at 350 in the oven

  3. Boil water and add the pasta until ready

  4. Combine Pasta, Mushrooms, and Hidden Springs Basil and Olive Oil cheese to a large boil and mix thoroughly

  5. Serve Fish separately, to make the dish vegetarian Friendly.
