Bad Axe
Bad Axe, named after the river that was the site of the Bad Axe Battle in 1832, is a mild soft cheese. Made using pasteurized sheep's milk, the cheese is aged for 30 days and is waxed to retain its moisture. This cheese was recreated to accommodate customer requests for a cheese that melts nicely. It makes a wonderful pizza, mac and cheese, or grilled cheese with the rich creaminess of a sheep milk cheese.

Bohemian Blue
Bohemian Blue was born when a tussle between America and France threatened to add a 300% tariff on Roquefort, the world’s most famous French-made sheep’s milk blue. This partnership produced an amazing, cave-aged, rindless blue made from milk from Hidden Springs, crafted by Hook’s Creamery in Mineral Point, WI. This blue is dry and crumbly compared to wet Roqueforts. With a sweet, slightly sour finish, it’s excellent drizzled with honey, or savored with a single malt scotch or sweet wine.

WISCHEGO
Our Manchego-style cheese is a crowd-pleaser. It has a rich, meaty flavor that is brightened by the notes of fermented fruit and salt. Numerous awards have followed this cheese, most recently winning first place in its category at the 2023 American Cheese Society Awards.
High Quality Lamb
Hidden Springs lamb products are our way of ensuring we are giving our animals the best life possible. Our babies are lovingly raised by our family her on the farm and then they spend the summer months out on pasture. The facility in which we choose to process with is 5 miles from the farm so we can take them ourselves in the morning and they are processed quickly and humanely. The plant is not only USDA certified but also holds a humane animal handling certification inspired by the teachings of Temple Grandin, known for her extrodinary abilities to handle animals. In addition to retail cuts of lambs, we have also launched a line of summer sausage and lambsticks. These ready-to-eat products are made of 100% lamb with no other animal fillers. We are very excited to offer these products for you all to add to your charcuterie board or just to eat as a healthy snack!

Hidden Springs Bath
Our Bath line is a project Amy started with a young Amish woman who works for us on the farm and in the creamery, her name is Elmina. Elmina is 23 years old and milks the sheep, takes care of the lambs during lambing time and helps in the creamery a few times a week. She is a valued part of our team and has been interested in making soaps with our rich creamy sheep milk for some time. She has done a great job developing our first 5 soaps and has lots of energy and ideas for our spa line to grow!
