TIMBER COULEE

We learned to make this cheese from a French master cheesemaker who visited our farm in 2011 and trained us to make cheese in the Ossau Iraty style. Aged six months, this sheep's milk cheese is more complex than our Bad Axe, deeper in flavor, nutty with a buttery finish.
