Sheep

The dairy sheep at Hidden Springs Farm are a mix of East Friesian and Lacaune. East Friesians originated in northeast Germany near the Friesian Islands. They have white wool(except for the black ones!) that is only on their bodies, not their faces, legs or ears . They are gentle and easily managed, especially in small herds, which suits the Jensens' small, low tech farming practices.

Lacaune dairy sheep originated in southern France, an area famous for Roquefort cheese. It's a rocky terrain, so the sheep adapt well to harsh conditions. But under good conditions (like at Hidden Springs Farm), they are healthy and robust, do well in larger herds, and produce milk rich in fat and protein.

Sheep milk is pure clean white, with a rich, bland slightly sweet taste. It is higher in solids than either cow or goat milk, and has up to twice as many minerals like calcium, phosphorus and zinc and the all important B group Vitamins.

It's a good alternative if you are lactose intolerant, and cheese made from sheep's milk is excellent.
